Caramel Apple Pumpkin Spice Cupcakes

Fall has hit, which means one thing to me. Pumpkin! Pumpkin everything. And of course new pumpkin inspired cupcakes. 


Inspiration hit one morning while I was out to breakfast at a local restaurant and since it's fall I ordered pumpkin pancakes. I mean who wouldn't. But these pancakes were different, they came with a caramel apple topping. And as in all things I started instantly thinking about how I could turn that in to a cupcake. The thinking started, then continued, and finally the idea materialized. 

The result ... a pumpkin spice cupcake, with a caramel apple filling, topped with a cinnamon cream cheese frosting. 

The pumpkin spice is light and fluffy with the right balance of cinnamon, nutmeg, cloves and of course pumpkin. Then the filling starts with apples sauteed in cinnamon and sugar, then topped with a light caramel sauce. Finally to balance out the flavors an airy cream cheese frosting with just a hint of cinnamon. All in all, a formula for deliciousness.
