How Do You Say Decadence

... Chocolate Strawberry Cream. Just imagine a chocolate cupcake, which on it's own is a delicious treat, but even something that good can be improved upon. But how ... then the thought hit me, strawberries. Yummy, chocolate and strawberries. 


What came together was a chocolate cake, with a strawberry whipped cream filling, and a strawberry swiss meringue frosting. The strawberry whipped cream filling, OMG, it was difficult to save it to fill the cupcakes. It's so amazing you really just want to eat it all up, then lick the bowl clean. Then there is the frosting, pretty much tastes like melty strawberry ice cream. All complimented with chocolate. In one word ... DECADENCE!!!

ManCakes

While everyone loves cupcakes, they do tend to have a fun but girly vibe to them most of the time. Individual cakes wrapped in pretty paper (often times pink or pastel of some sort.) And the flavors, they just aren't something you would want to serve at your next Superbowl party (or for the gamers out there, your next LAN party.) 


Could there be a solution to this dilemma, is there a cake out there that screams, "I'm manly!" The answer my friends, is yes there is, and I have baked it. 


This cupcake has all the flavors a man could want. Beer, bacon, and cheese. You heard right, a cupcake made with three of your favorite things. The cupcake itself is a fluffy white cake with beer, cheddar cheese, and bacon baked directly into the cupcake. My kitchen smelled like a delicious fondue as I prepared the ingredients. Not quite the normal cupcake scent. Then take that cupcake and top it with a cream cheese frosting, that has delicious chunks of cheddar mixed in, and you have a cupcake that any man would be proud to serve at his Superbowl party.

For the love of Cupcake!!!

Last night was the first time my partner in crime and I were able to get together and bake for quite a long time. While my kitchen has been overflowing with cupcakes, hers, well it hasn't been quite as busy. But what do you expect when a stand mixer goes kaput. That's right, lack of baking. So I gathered up my stuff, including my stand mixer, packed it in my car, and headed out there after work. The goodies menu ... Snickers' cupcakes and lemon (yes I said lemon again, because I'm in love with this cupcake.) We were also going to try our hand at fondant, making it, and decorating with it. But the first recipe I found, wasn't going to work for figures, and the one we tried was still to soft ... but that's a story for another day. 


You may be wondering what is a Snickers' cupcake ...  Thinking, how do you get all the wonderful flavors of a Snickers into a single cupcake. Just imagine the combination of a chocolate cupcake, filled with chopped Snickers tossed in a homemade caramel sauce, and frosted with a caramel buttercream frosting. The frosting, OMG the frosting. Creamy, buttery, sugary, and salty. Not to mention how the filling was like a Snickers bar, but so much better, with the extra coating of caramel bliss. The result, a mind boggling experience of the ultimate deliciousness. 


Then we got to work on my favorite lemon cupcake. I know most people want chocolate, but me, I love lemon desserts. While I would never turn down chocolate, there is something so amazing about the combination of tartness and sweetness. It's a perfect summer dessert because it's light and fluffy in both flavor and texture. Really I don't see how anyone could turn down one of these amazing cupcakes. 


Last night we made up a batch of lemon cream cheese frosting, but I was too tired to frost my half of the cupcakes, and needed to drive home. All the way home, I had this thought that strawberry cream cheese frosting would be divine on these ultimate lemon cupcakes. So that;s what I did to my unfrosted cupcakes, I made them shine with a delicious frosting made with fresh strawberries and cream cheese. Yum. I then topped them of with strawberry slices. Not only do they taste of summer, they look super summery with the dash of fresh fruit and the light colors.

I'm a Yankee Doodle Dandy, Yankee Doodle, Do or Die


I went traditional and got creative for my desserts this 4th of July. It's fairly obvious I love cupcake, but really who doesn't. They are a little piece of happiness. But when I think of the 4th, I don't think cake, I think pie. Cue song "I Like Pie, I Like Cake." 


But I had never made a pie, and I was taking my dessert to a lindy hop potluck. Not the place where utensils are guaranteed. So I wanted to make personal pies, or what I'm calling cup-pies, since they are smaller then tarts, made in little muffin pans. I also wanted to do a star top, instead of lattice style. So with this idea in my head, I got together the ingredients for blueberry pie, and made my first pie crust. 


They didn't all come out as planned (way messier then expected,) but they tasted good and one blueberry cup-pie came out perfect. In fact, at the potluck,  these were gone with in minutes of me setting them out. I guess everyone loves blueberry pie. Especially personal servings of it. 





The other dessert of the day has already been mentioned in a previous posting, but I'm going to repeat myself. So here it is, I also made red velvet cupcakes. They were a huge hit. I didn't come home with a single cupcake. 

Sinfully Delicious ... Red Velvet Cupcakes

It seems to me that everyone's favorite cupcake is red velvet, which means, I make a lot of red velvet cupcakes despite my less then enthusiastic feelings towards this particular flavor. Don't get me wrong, it's a delicious cake, but I would rather eat a lemony cake any day. what truly makes this cake good is the frosting. In fact cream cheese frosting is so good, it makes this cake worth eating, and it keeps people coming back for more. 


Ironically, my cupcake journey began with red velvet cake. I had a friend who loved cupcakes, it was her birthday and I wanted to do something nice for her. So, I asked her what her about her favorite type of cake, to which she responded red velvet. I went to the store the weekend before her birthday to find a box mix (yes, you heard correctly) but there wasn't one to be found at my local grocery store. So I went home, and started looking up recipes for red velvet cupcakes online. They were of course all over the web. I choose one at random, deciding that it didn't look too difficult, and did a practice run. My first cake from scratch and everyone absolutely loved them. 


So I baked them for my friends birthday, mixing up the colors (if I remember correctly I made purple and green cake) and the rest, as they say is history. I've been regularly baking cupcakes ever since. And I've made more red velvet then any other cupcake. 


I've made them for my best friends daughter's birthday as one of three types of cupcakes. It was an Alice in Wonderland themed party. So I made the cupcakes representative of the Queen of Hearts. The red seemed like the way to go, and I colored the frosting, and used the awesome two tone frosting technique I learned at annies-eats.com 


They were more popular then the chocolate cupcakes. 


My next set of red velvet cupcakes, were actually minis for Halloween that have been seen multiple times already with gruesome white chocolate zombie brains on top. 


I took a break from red velvet after that, until a former student of mine asked me to make some Valentine's Day cupcakes for her bar, Jay Dee's in Alhambra. So I brought the red velvet recipe out once again. This time decorating in a much more cheerful way. Sprinkles and hearts, with pretty white frosting, and pink wrappers. They just screamed lovey dovey kisses. XOXO 


The next batch, happened today for a pre 4th of July potluck. Different wrappers, and some blue food coloring, make them look completely different. Add a red peanut butter M&M on top, and what a yummy presentation. All of the cupcakes were gone by the end of the evening. And I even got a lot of compliments including one friend telling me he "could drink the frosting."

Erin Go Bragh

Holidays need cupcakes, that's all there is to it. So everytime a holiday comes around, baking ensues. And not just any baking but themed baking. Who can resist cupcakes that remind you of the season, whether it be peppermint mocha at Christmas, pumpkin spice for Halloween, or apple pie for Thanksgiving. Each cupcake is a little piece of happiness, in a adorable themed wrapper. And for those us of Irish decent, or those of us that wish we were, St. Patrick's Day is no different.

So what do you get when you have a cupcake minded person, baking cupcakes for this Irish holiday? I can tell you it's not your average cupcake. Just think of what says St. Paddy's Day to most people, is it the amazing Irish landscapes with their forty shades of green, the celtic heritage, the castles ... Not really, for most people it's the pubs. And by pubs, I actually mean the booze. So each and every cupcake I made had Irish liquor in them, and each of them was superb.

I started with my favorite cupcake, you've seen it here before, the Irish Cake Bomb. A decadent Guinness Chocolate cupcake, with a chocolate Bailey's ganache, and to die for Bailey's buttercream frosting. This cupcake is happiness in a tiny personal cake.

Since these have been done, and done again. In fact recipes abound in the blog world (mine is a combination of several different recipes, with my own twist.) I couldn't just make the Irish Cake Bombs.

So I tried two new cupcake recipes, both created by your truly. The first was an Irish Coffee cupcake with whipped cream frosting, sprinkled with cinnamon. Yes this cupcake did include it's own booze, Irish whiskey to be specific. I used Bushmills, but that's only because it was on sale.


As you can see these cupcakes were delightful. The light mocha color of the coffee whiskey cake, set off the fluffy whipped cream frosting. And the combination together, ah-mazing ... A perfect breakfast cupcake, did I say breakfast, I mean a perfect after dinner cupcake because who, I ask, would have a cupcake for breakfast.

Of course the cupcakes didn't stop there. Just two types is not enough of a variety, especially when 6 dozen cupcakes are needed, so I needed another variety, something that would please the tastebuds, but different then the current selections.

Ah ... I finally had it. Bailey's cream cupcakes. A Bailey's and cream cheese cupcake with cream cheese frosting. Oh, this cupcake was delightful, delicious, delovely. The Bailey's flavor was in the creamy cupcake. A wonderful Irish cream, that was perfectly complimented by the cream cheese frosting. It reminded me of the fantastic Bailey's cheesecake I had over and over again the last time I was in Ireland.

The shamrock rings were my favorite touch, despite the lack of leprechauns and pots of gold. But at least it lead to an awesome cupcake.

Summer time and the living's easy

The heat is rolling in, and for some baking would seize to happen, but not for me. I prepared to sweat it out as I made some summer inspired cupcakes. 

I don't know about you, but when I think of summer, I think of berries ... berry salads and family picnics, juicy strawberries, tart raspberries, and blueberries. And then, then you can bake them, blueberry muffins, blueberry pies, the list goes on and on with all sorts of delectable ideas.  

But really, berries are good, but what makes it even better is citrus. I happen to love citrus desserts. Super yummy lemon cake, lemon tarts, lemon bars ... so super delicious. 

And then there's the summer drinks, lemonade, limeade, and of course margaritas. How can you go wrong with lemons and limes? You really can't, especially when you combine them with berries. 

So the other day, I was hanging out with a friend, and we had raspberry margaritas, and when a flavor combination goes well, it makes me think of cupcakes, how could that flavor combination be turned in to a cupcake. Once the idea hits ... it has to happen.

It turns out the stars agreed, because they aligned just right, not only were lemons and limes on sale at the grocery store, but so were raspberries, strawberries, and blueberries. Which means baking was on. 

The first cupcake to be baked was a delicious lime cupcake, with a raspberry buttercream frosting. After zesting and juicing half a dozen limes I was ready to bake ... my oven and apartment heated up, with the oven going, and my mixer whirling. Until finally the cupcakes were done. 

The pink frosting is the result of fresh raspberries mixed in, all natural no food coloring. The cupcakes have a light raspberry filling, and a citrusy lime flavor. 

The next batch was my second attempt at a lemon blueberry cupcake, changing around the recipe, adding more lemon zest, the cupcakes came together fantastically, light and airy, with an amazing sweetness from the baked blueberries, topped with a light lemon marscapone frosting, an almost overwhelming burst of lemon, toned down with the sweetness of the baked blueberries.
